My very own Special Recipe for gluten free (dairy-free) turkey meatballs!

Being Italian my boyfriend and I both crave any sort of Italian cuisine, most often meatballs. So, a couple nights ago I made some homemade meatballs and they were delicious! I do a lot of my cooking by eye rather than measurements, so you’re going to have a chance to be your own top chef and make some altercations if need be! Here are  the ingredients:

  • 1lb of ground turkey meat
  • 1 1/2 tsp of fresh minced chives
  • 1 tsp of fresh minced parsley
  • about 2 tbsps of mayo
  • pinch of salt and pepper
  • about a half of cup of Gluten-Free Bisquick
  • 1 tsp of italian seasoning
  • 1 tsp of garlic powder

(the seasonings are where youre going to have to feel it out, Im not sure on the exact measurements but I have them as close as possible!)

Next youre going to mix this all together in a bowl with your hands, if the  mix still is way too sticky you can add more of the Bisquick, but it will stay a little sticky. You just need to be able to roll ball, about the size of a golf ball maybe a tiny bit bigger. Lay them spaced out on aluminum foil on a cookie sheet, while your oven is preheating to 355 degrees F.  Once preheated, place them in the oven and check on them every 6-7minutes or so, and flip as needed to prevent burning and so they’ll cook evenly. It should take about 20 minutes or so, you can check one by cutting it in half and see if there is any pink.. its okay if they are slightly pink because next you’re going to stick them in a pot of your choice marinara/pasta sauce. Simmer for about 45 minutes to get nice meat flavor in the sauce! If you have some gluten free pasta you can put them over that, or use some gluten free bread and make a meatball sub. Josh and I just ate them with pasta sauce. I hope you enjoy them as much as we did!
