Missing those beers on a hot day??

Don’t you miss cracking open a beer on those really hot days? When everyone is grilling out, or on the beach enjoying a nice brew. Well, don’t worry because there are plenty of hard ciders out there that are naturally gluten free. My favorites are definitely Woodchuck and Angry Orchard. Woodchuck (above) makes several flavors but depending where you live you may only get a few. Here in upstate NY I’ve had amber, raspberry, granny Smith, and crisp. There are a handful of other flavors I anticipate trying like pear and 802, not to mention the limited releases of spring, summer, fall, and winter. So when its a day like today, and its 95 out and you need a nice cold gluten free refreshment, crack open a woodchuck! Enjoy, and please drink responsibly. http://www.woodchuck.com

We’re Back, Starting June 2012!!!

We’re back! Although we have been down for a while, I am pleased to say that starting in June we will be posting again. We are in the process of moving so it may not be right on the first of June, but definitely within the first week of the month! Whether its Josh or myself just blogging and throwing some facts at you, or me sharing some awesome new gluten free (and dairy-free option) recipes!! I cant wait to get back on our MoJo grind and to hear from you guys! Stay tuned! 🙂

My very own Special Recipe for gluten free (dairy-free) turkey meatballs!

Being Italian my boyfriend and I both crave any sort of Italian cuisine, most often meatballs. So, a couple nights ago I made some homemade meatballs and they were delicious! I do a lot of my cooking by eye rather than measurements, so you’re going to have a chance to be your own top chef and make some altercations if need be! Here are  the ingredients:

  • 1lb of ground turkey meat
  • 1 1/2 tsp of fresh minced chives
  • 1 tsp of fresh minced parsley
  • about 2 tbsps of mayo
  • pinch of salt and pepper
  • about a half of cup of Gluten-Free Bisquick
  • 1 tsp of italian seasoning
  • 1 tsp of garlic powder

(the seasonings are where youre going to have to feel it out, Im not sure on the exact measurements but I have them as close as possible!)

Next youre going to mix this all together in a bowl with your hands, if the  mix still is way too sticky you can add more of the Bisquick, but it will stay a little sticky. You just need to be able to roll ball, about the size of a golf ball maybe a tiny bit bigger. Lay them spaced out on aluminum foil on a cookie sheet, while your oven is preheating to 355 degrees F.  Once preheated, place them in the oven and check on them every 6-7minutes or so, and flip as needed to prevent burning and so they’ll cook evenly. It should take about 20 minutes or so, you can check one by cutting it in half and see if there is any pink.. its okay if they are slightly pink because next you’re going to stick them in a pot of your choice marinara/pasta sauce. Simmer for about 45 minutes to get nice meat flavor in the sauce! If you have some gluten free pasta you can put them over that, or use some gluten free bread and make a meatball sub. Josh and I just ate them with pasta sauce. I hope you enjoy them as much as we did!

Spiked Pink Lemonade from Everyday with Rachel Ray

Today while watching Rachel Ray, I couldnt resist in sharing this yummy summer treat with you! Its so easy and is perfect for summer parties by the pool, cook-outs, or a refreshing drink at the lake. A few suggestions: Use a cheap well-vodka, save the pricey stuff for your at home bar.. not for a party batch of drinks! Another is instead of trying to keep your punch bowl cold with just ice, make some ice cubes with fruit juice, so your drink isnt watered down when they melt! Try out this summer treat and let me know what you think!!

You need:

  • One large punch bowl
  • 1 (750ml) bottle of vodka — For a twist try out UV lemonade!
  • 5 cups of lemonade
  • 2 cups of cranberry juice
  • 3 cups of ginger ale

Your only directions are to combine in the punch bowl, stir and serve!! Enjoy!

Chocolate Chai Tea (Gluten and Dairy Free)

While cleaning up the house I needed a bit of a caffiene boost and wanted some tea. I have organic chai bags but I was also having a bit of a chocolate craving so I came up with this tasty treat. Mix between a tea and hot chocolate, without the richness and dairy. Its to die for, soooo delicious!!!

Boil 4 cups of water

Add 2 tea bags of a black chai. (Tazo Organic Chai: Spiced Black Tea)

Bring temp down to a 2-3 or low heat

Add 5 heaping scoops of hersey cocoa (not hot chocolate mix, pure cocoa)

Stir in about 4 healthy tbsps of sugar.. add more or less depending on how sweet you prefer

And lastly add a dash of ground cinnamon or add a couple cinnamon sticks.
The measurements aren’t exact as I just added as I went, so be your own chef today and add a little more or a little less for your taste! And to switch it up, let it cool and chill it for a cold iced drink! 🙂 Enjoy!!

Kathleen’s Cottage (NH) Features Gluten-Free Beer and Dessert!!

While visiting back home (Bristol, NH) this past week, my mom and I went and visited a restaurant we used to eat at a lot when I was younger. Formerly Cu Na Mara’s, Kathleen’s Cottage is owned by a friend of my mom’s, Maryanne. If you enjoy a great Irish Pub this is the place to go. Whether you live close by or you are traveling through the area you have to stop by Kathleen’s Cottage! The best part about it is, they not only feature gluten free beer ( Redbridge and St. Pete’s), but they also have a flourless/gluten-free chocolate lava cake for dessert! So here is a shout-out to Kathleen’s cottage, great for gluten-free diets and anyone else who enjoys some great Irish beer and authentic Irish food!

Quick delicious vodka mixed drink (GF)

Last night Josh and I had a small get together and the four of us all pitched in on a bottle of Grey Goose. I myself am not a huge vodka fan so I put my sister (Amanda Rose) in charge of making my drink. Although most grey goosers prefer a simple vodka tonic, or a martini, I can’t drink vodka straight up. So, a simple and gluten free fruity drink is as follows:

1-2 shots of Grey Goose (or choice vodka)

Couple splashes of V8 V-Fusion (We used Strawberry Banana)

Splash of Sprite or Sierra Mist
Easy enough right? Its delicious and you get your daily fruits and veggies! Like mentioned in previous posts all liquors are technically gluten free because of the distillation process. If you are sensitive to liquors though, try out a potato or rice based liquor instead.

The troubles of ordering out and “cheating” on your GF diet..

I know many of us have a hard time going out to eat or ordering to-go. Sometimes its such a pain, and many newbies may even consider “cheating” and eating “just a littleeee” gluten, and just hope it will be worth the consequences. If we ever ask ourselves “Is it worth it?”, the CORRECT answer is no. We get so frustrated that we cant order anything or there’s nothing else in the house. When really its I don’t want the limited choices given to me, and I really dont wanna make rice again for dinner when we have mac n cheese in the cupboard. I will admit that when I first found out I was GI, I cut back on eating gluten… but I still ate it. Those of you who may have tried the gluten enzyme pills know that though they may help a little, its still not the right choice. When I finally made the commitment to be 100% Gluten-Dairy Free it was really hard, but the fact of the matter is, and hear me out on this.. Celiacs and Gluten intolerance is not a diet, its a disease. It should not be optional. 

So for instance today when I went out to breakfast instead of getting pancakes and french toast like I wanted.. I got the steak and egg special, two eggs, homefries, bacon and a 6 0z sirloin. Now you tell me that I walked away from that meal not full, and not satisfied.. I walked out with a bang for my buck and I ate right. And for dinner, instead of eating pizza like the rest of my family, I had a salad with turkey on it and a side of fries. There are always options, whether we “prefer” them or not. I know that giving up some of our favorite foods is hard, believe me- I’m italian and loveeee my pasta, italian bread, cheese and pizza.. But I will be the first to tell you how much better I feel all together. When you continue to “cheat” or eat gluten anyways (even just occasionally), your immune system responds by damaging or even destroying villi- which is the hair like lining of your small intestines. Without healthy villi a person can become extremely malnourished, because the villi can no longer let nutrients from food into the bloodstream- meaning celiacs is a disease of malabsorption. The only way you can get the villi to heal is to commit to a strict gluten free diet, and if you cant commit you run a high risk developing complications such as osteoporosis, anemia, and cancer.

So please! set down the pizza, the pretzels, the garlic bread, drop that fork with the pasta wrapped around it, and commit with me to a gluten-free lifestyle! I promise you in the end you will feel so much better everyday, and you will have such a healthier life.

Gluten-Free Simple Sandwich Salad

Okay, anyone who is GF this looks like a dream, right? Well, recently I went to a nice little deli in Vermont that I always went to as a child. I didn’t realize that I would now have a much harder time ordering there. I ended up deciding on “making my own sandwich”  just without bread, and it was surprisingly awesome! I know we all love bread, but when it comes to having to eat GF it can be too expensive or hard to find, and we might just be at a restaurant that doesn’t have many options for us. So, I’d like to share with you guys what ended up being in my to-go container that made me a fan of what I now call the “sandwich salad”.

  • First layer was the basic LTO, couple pieces of lettuce, two big slices of tomato and some onion.
  • Second, they asked if I would like any Mayo or Hummus spread on my lettuce, Im a huge fan off hummus (as it is almost always gluten AND dairy free)
  • Then choose your meat, I prefer turkey and got 3 good slices laid right over the bed of my veggies.
  • If you aren’t lactose intolerant go ahead and add your choice of cheese.
  • Then choose either some salad dressing, or the condiment of your choice. I suggest even a Honey Mustard (if GF). It’s a nice balance between a dressing and a condiment.
  • They topped mine off with some oil,vinegar alfalfa sprouts!
  • If you’re not a fan or don’t like the idea of alfalfa sprouts, you can try maybe some fresh spinach, mushrooms or even sunflower seeds, just a little extra something.

I will be honest in saying I was fairly certain it was going to be a very lame and dull lunch, but once I grabbed a fork and knife, cut it all up and took my first bite- I was much more than pleasantly surprised. On my next shopping trip I will be sure to get the essentials to make my own “Gluten-Free Simple Sandwich Salad”.
